Hearty Lentil Soup
A comforting and nutritious soup packed with vegetables and tender lentils, perfect for a satisfying lunch.
Ingredients
- 3/2 cup dried lentils
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp dried thyme
- Salt and pepper to taste
Preparation
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in lentils, broth, diced tomatoes, cumin, and thyme.
- Bring to a boil, then reduce heat and simmer for about 25 minutes or until lentils are tender.
- Season with salt and pepper to taste.
