Hearty Lentil Soup

A comforting and nutritious soup packed with vegetables and tender lentils, perfect for a satisfying lunch.

Ingredients

  • 3/2 cup dried lentils
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp dried thyme
  • Salt and pepper to taste

Preparation

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in lentils, broth, diced tomatoes, cumin, and thyme.
  5. Bring to a boil, then reduce heat and simmer for about 25 minutes or until lentils are tender.
  6. Season with salt and pepper to taste.
